Easy Pesto Pasta & Chicken Mayo Rolls Meal Prep Recipe

10 Meals: 6 Medium Bowls of Pasta + 4 Meals of 2 Rolls Each
Ingredients:
  • 500g Whole Wheat Pasta
  • 1 Rotisserie Chicken (stripped and torn/chopped into bite-sized bits)
  • 40g Packet of Rocket or Baby Spinach
  • 180g Fresh Basil Pesto Dressing or Plain Basil Pesto (for vegans, use pesto and mix with your favourite vegan mayo to create a similar dressing)
  • 8 Small(ish) Brown Seeded Rolls (or any rolls you prefer)
  • 200g Mini Rosa Tomatoes (or any baby tomatoes)
  • Mayo (I’m currently loving the B-well Canola, but any mayo you love will do)
Method (Pasta):
  1. Cook the pasta according to the instructions on the package, then drain any excess water.
  2. Add half the chicken, half the rocket, all the tomatoes, and the whole dressing sachet.
  3. Season with salt and pepper. For extra flavor, grate Parmesan cheese and add chili for some heat (optional).

Method (Rolls):
  1. Mix the remaining chicken with mayo (as much as you like, but about 1 tablespoon per roll is a good starting point).
  2. Add the chicken mayo mixture to the rolls (you can butter the rolls before if desired).
  3. Feel free to add some rocket or baby spinach to your rolls for an extra burst of freshness.
  4. Optionally, you can add any seasoning, chopped fresh herbs, gherkins, grated carrots, etc. to make them fancy—but they’re delicious even plain, especially when you’re short on time and ingredients.

Freezing Tip:
